Southwestern Favorite - Pasta Pinion Verde

2 quarts water
pinch salt
1lb Farfalle Pasta
1/2 diced yellow onion
1 tbsp fresh minced garlic
1/8 cup butter
3 tbsp white wine
1 pint heavy cream
2 poblano chiles, roasted, peeled and chopped
1 handful of shelled pine nuts
1/2 cup grated manchego cheese
2 diced tomato
salt and pepper to taste

boil water with pinch salt, cook pasta for 8-10 mins... (until cooked)

while pasta cooks, saute onion and garlic in butter until soft, then deglaze the pan with white wine. Add cream, poblano chiles and pine nuts to saute pan and bring to boil. cook on high heat for 2 mins. Turn off heat and gradually stir in cheese.

Drain pasta and while still hot, toss it with cream sauce. Add salt and pepper to taste, top with diced tomato.
